Lhern Som (Fermented Fish Egg Curry With Pork Shoulder

"Lao curry of pork shoulder with fermented fish egg, pea eggplant and coconut milk"

 

The dish that triggered a flurry of messages asking me "What is THAT?!?" and "No food should be THIS pinkish!"

 

Even with fermented fish eggs, which by the way imparted a lovely fishy umami to the curry, it shouldn't be this pinkish. I only surmised that some form of beet root juice was added to the curry to impart the off-the-chart colour. Colour aside, the curry was rich and the slivers of pork shoulder tender. There was a mishmash of vegetable - pea eggplants, green beans, water chestnut, onions etc.

 

I was happy to try something funkily tasty.
