Minced Pork Omelette

Dinner @ "Simmaly Restaurant", a place offering more local fares (as attested by our local guide).

 

Minced pork omelette is surprisingly common or popular in Laos....I kept seeking it popping up on the menus, whether it was in the city or in this corner of Laos.

 

Then again, what was there to dislike? Fluffy tender eggs, deep fried in oil so they puffed up and had crispy edges, encasing fatty minced pork?
