Dinner @ "Midlands Deli" in Kandy.
These are called "Appom" in Singapore but have virtually disappeared from the culinary scene.....there used to be an old Chinese lady who "inherited" a set of the cooking apparatus from her Indian neighbour and started to sell these delicious offerings near St.Anthony Convent many moons ago.....
I rediscover my childhood memories in Sri Lanka where "Appom", otherwise known as "Hoppers" is the staple for dinner - such joy! And I love the egg version - an egg is broken into the pancake as it cooks - rich, eggy and chewy in the centre but all crispy and fragrant around the edges.
Heaven!!
