String Hoppers

Dinner @ "Midlands Deli" in Kandy.

 

A different kind of Hopper - String Hoppers are made from steamed rice flour made into a dough with water and a little salt, and forced through a mould similar to those used for pasta to make the strings and then cooked by steaming.

 

They are essentially the Puttu Mayam(s) of Singapore, alas, also a disappearing dish. Puttu Mayam is enjoyed as a dessert served with red sugar and grated coconut in Singapore; String Hoppers are enjoyed savoury with curries.

 

Hoppers in general are popular as breakfast or dinner in Sri Lankan. There is also a red colour version made from red rice.
