山捞叶炒文昌鸡 (Wenchang Chicken Stir-Fried With Pepper Leaves)

The use of pepper leaves was a big surprise - it has a deep savoury, almost fishy, almost cheesy (almost smelly feet) note but stir-fried with pre-fried ginger and chicken, the dish hits you in the face with its mild pong at first but slowly it begins to grow on you, while at least for myself.

 

I love the clash of freshness from the ginger and the heavy-handedness of the pepper leaves - thought the combination electrified the dish.
