隔水蒸文昌鸡 (Steamed Wenchang Chicken)

Wenchang chicken is another one of Hainan's culinary treasures, and this IS the ancestor of Singapore's famous "Hainanese Chicken Rice".

 

What a difference of 12 years make. The ones I had 12 years had meat as tough as hide and were impossible to enjoy. 12 years on, the islanders seem to have learned from their overseas 'brotherlings' and improve upon their own version, so much so, it tasted almost like the Singaporean version.

 

The meat was fragrant, tender and moist. The only difference is that they still offer only crushed ginger in chicken oil as the only condiment but since the restaurant happened to have some chopped chilli padi, chopped spring onion, crushed garlic and Calamansi limes around.....I did some improvement of my own to the condiment and instantly the condiment SANG!
