Mushrooms & Radish

Dinner @ "Marugo" (丸五).

 

Cold 'slimy' mushrooms paired with cool grated radish for a refreshing starter. We were quite astounded that the radish tasted sweet and not at all pungent, which raw radish can be.

 

Enjoyed, lightly dipped with soy sauce, it was coolingly umami and provided a good start for the main show to come.
