I was remarking that the sight of this dish will make many westerners faint. It's a dead bird on a dish with the head on.
On the other hand, carcass is prized in Asia for flavour delivery and flavour this dish did deliver with aplomb! THE dish, in my personal opinion of the lunch.
The size of the bird easily offered careless chefs chances to deep-fried it beyond how it should be treated with respect, easily turning it into a charred carcass of plain bones and charcoal. Here, the flavours were lip-smacking and the meat tender and succulent - well worth ordering a few more just to enjoy a dish so well-done.
