猪软骨米线 (Pork Cartilage Rice Vermicelli)

A new shop that recently opened near my apartment selling a series of rice vermicelli served in boiling hot earthern pots ala the famous Yunnan style rice vermicelli.

 

Opted for the pork cartilage version. The rice vermicelli was served separately in a bowl to allow the customer to add the noodles at their own convenience to control the texture as adding them to the boiling broth for too long would render the noodles too overcooked.

 

The broth is creamy (although I think it's more from the addition of milk) and umami but light enough to be not overpowering.
