Bún Bò Nam Bộ (Stir-Fried Beef Noodles)

From a street stall that was packing in the locals.....

 

This seems to be THE noodle dish of the north. Beef used for the dish is well soaked in sugar, fish sauce and pepper and other seasonings and stir-fried on the spot only when there is an order with a sauce made from fish sauce, sugar, lemon, chillies and served with fresh raw vegetable, fried onion, roasted peanuts and bean sprouts.

 

The taste was rather complex...sweet, salty and a tad of tang with plenty of crunch from the vegetable, bean sprouts and roasted peanuts. And I must say I do like the thick aroma of the wok ("Wok Hei) which really defined the aromatic signature.
