干炒牛河 (Stir-Fried Beef Rice Noodles)

Dinner @ "阿宝家 (APO'S)", a self-styled Cantonese restaurant but serving a bit of everything.

 

One of Southern China's and Hong Kong's signature dish. The shop did a fair edition of this simple but remarkably skilled dish. There was the signature wok aroma and everything was cooked nicely through with the right balances in basic tastes.

 

I just don't get the eggy garnish - looked like coloured paper confetti.
