满族炒大棒骨 (Manchurian Style Stir-Fried Big Pork Bones)

Big bones; Chunky meat typifies the food of this region.

 

"Suckable" pork bones is one of the main signature dishes of the Northeast. The "suckable" part being the juicy and fatty marrow. Folks who love to gnaw on bones and ribs would have this hearty way of enjoying meat.

 

Here, instead of the usual stewed version, the bones were cooked a second time by flash stir-frying with some vegetable. They were still plenty juicy, tasty and very flavourful.
