The BEST Sugar Glazed Sweet Potatoes I ever had.

Hot sugar glaze is poured over fried sweet potatoes and served quick while still molten. To enjoy the dish, one dunks a piece of the gooey morsel into a bowl of cold water and the sugar crystallises into a crunchy sugar shell. It is this juxtaposition of texture that made this dish enjoyable.

 

In this restaurant, the sweet potatoes were extremely pillowy, almost marshmallow-like and so the crunch gave way to a soft and airy interior which really made an otherwise "simple" dish exquisite!
