年猪烩菜(血肠白肉酸菜汤) (Blood Sausage, Pork & Sour Cabbage Soup)

Lunch @ "八大碗".

 

A dish that has its roots in past Manchurian rituals.

Pigs are usually sacrificed to appease the Gods.

 

As such, pig's blood and cooked pork are traditional, standard and common Manchurian ingredients. As the north is not conducive for agriculture, vegetable are usually pickled or preserved for better storage and so sour cabbage is another common ingredient.

 

Combine the animalic pork and the sourish cabbage and a soup made in heaven was formed. The soup was all tangy, sweet, umami, appetising and surprisingly refreshing! I couldn't slurp up fast enough.
