铁锅小煮面 (Steel Pot Noodles)

Dinner @ "大牌小厨".

 

The stock was flavoured with Chinese preserved ham and fried pork skin, rendering the soup sweet and umami with a thick (gelantinous) mouthfeel. The noodles themselves were bland; it was the soup that sang!
