Stewed Beef Tripes

Lunch @ "Purger Restaurant".

 

My mate is NOT into offals.

He usually sniffed and held up his nose.

 

I assured him that he must try this - having tried it 9 years ago in neighbouring Slovenia.

 

How could anyone said no?

Beef tripe cooked till they melted into the stew like a congee.

There was NO offending offal notes of any kind.

Just tenderness and gelantinous goodness.

All savouriness; all moreishness; all deliciousness.

I could actually claim that this is a thick soup.

 

Mate took a very hesistant mouthful.....swiggled it around in his mouth, looked at me and took a second. I knew I had won (grin) The serving was rather large when it arrived and I was afraid that I was going to polish it off on my own; but both of us eventually polished the bowl clean.
