雨花石烹虾仁烘蛋 (Hot Pebbles Prawns & Egg)

Dinner @ "大牌小厨".

 

A great dish for table-side serving.

Hot pebbles pre-heated in oil in an earthern bowl of which a bowl each of beaten-up eggs and de-shelled and de-veined prawns were thrown in for a sizzling affair of spatter, hiss and splutter. Plenty of drama.

 

The prawns and eggs were cooked via the heat emitted by the pebbles: the eggs soft and not overcooked; the prawns sweet and succulent.

 

A delight!
