生鱼西洋菜老火汤 (Snakehead Fish & Watercress Soup)

Dinner @ the Michelin 1-Star "Lei Garden" (利苑).

 

Soup brewed so long that the proteins were extracted out of the Snakehead fish, turning the soup milky and rich; but rendered light and sweet by the addition of the watercress.
