黄金虾 (Golden Prawns)

Dinner @ "桥底辣蟹" (Under The Bridge Spicy Crab).

 

Wok stir-fried deep-fried prawns in salted duck egg yolks - so that the exterior of the prawn became luxuriously coated with all the salty and yolky goodness.

 

I love that soft crumbly yolk, all creamy and dreamy, and then it gave way to the sweet and umami of the prawn - it was a flavour bam-wham roller-coaster on the tongue!
