The simplest form of Chinese noodles - noodles served in a simple braised broth, sans everything else. It is thus essential for the noodles to be fragrant (aroma of wheat), for it to hold its shape in hot soup and yet easily bitten through with each bite. The soul of this simple bowl would be the savoury rich soup, flavoured with soysauce, light spices and fried shallots/onions/spring onions.
This was a rather tasty bowl, spartan by modern standards but nourishing nonetheless.
