Kaffir Lime-Lemongrass Panna Cotta

Back to "Starling" for dinner.

 

Italian meets Thai in a dessert bowl.

Kaffir lime leaf-lemongrass panna cotta with a coconut milk base with pomelo and a crackle of ginger cookie on top.

 

The Panna Cotta is a tad wobbly - too much gelantin? - but it was amply rich with he silky milkiness of coconut milk - so Lemak!

 

Instead of the usual berry compote, the pomelo and the Kaffir Lime leaf and Lemongrass lent a distinct Thai flavour to the dessert, which was much welcomed. The thin wafer of ginger cookie, when crunched into the Panna Cotta, added much prized brittleness and crunch as well. Lots of culinary playfulness in this dessert.
