Badamu Parfait (巴达木冻糕)
Lunch @ "Xibo Xingjiang Restaurant" (锡伯新疆餐厅), specialising in the food of the Xibo people live mainly in the northwestern hill country of Xinjiang.
The menu called it a "Parfait" but I think it's closer to a "Panna Cotta" - in the category of "gelantised milk desserts".
Badamu refers to the local name for almonds.
It is not overly sweet and richly milky in taste, which was not unwelcomed. The flavours are dominantly delivered by the heady nutty taste of the crushed almonds. I just find that it is missing a tad of something tangy (fresh fruits or jammy sauces) to lighten the overall slightly uni-dimensional taste.
