Smoked Chicken Baked Brown Rice

Lunch @ "Yoogoo", a cafe just round the corner from my apartment, a western-theme 'healthy food' place amidst rows of eateries offering local tastes.

 

I don't mind this baked rice at all. Perfect meal for winter days. The slices of smoked chicken infused it with a bacon-like smokiness and I like the different textures mingling: sweet crunchy corns, soft and tender mushrooms and gooey-stretchy Mozzarella cheese.
