白果芋泥 (Yam Paste With Gingko Nuts)

Lunch @ "莲花素食馆", a vegetarian restaurant across from Kaiyuan Temple.

 

This is very standard Teochew style dessert. It takes a long time to prepare this, usually hours - one first had to boil the yams until they are soft, tear away the skin and mash it. The mash is then cooked with oil and sugar until everything is smooth and shiny. Cooked and sweetened gingko nuts are then added for a finishing touch.

 

I love this, all creamy, silky, sweet and candy-ish - if someone is willing to prepare this, usually it is impossible to spoil the dish.
