牛杂粿条 (Beef Kway Teow Soup)

The version from "镇记牛杂". Basically, it is Kway Teow (flat rice noodles) soup served with a mixture of different parts of the cow - beef balls, slices of beef, tripes, tendons and other offals, with a spoonful or two of grated ginger and galangal mix added to mute any offensive animalic notes as well as to deliver a spicy kick.

 

The soup was only mildly beefy-tallowy and was pleasantly umami. The various beef cuts were tender. I actually did not like the galangal - I just thought it overpowered the bowl of noodles a tad with its herbaceous nuances.
