Xinjiang Big Plate Chicken With Potato (新疆大盘鸡)

Lunch @ "Xibo Xingjiang Restaurant" (锡伯新疆餐厅), specialising in the food of the Xibo people live mainly in the northwestern hill country of Xinjiang.

 

One of the signature dish to come out of Xinjiang and to be widely accepted by most folks who tried the cuisine of this province - chicken stir-fried with capsicum, potato and tomato, spiced with cumin and chillies.

 

The dish, almost impossible to create a failed version, was sweet, umami, tangy, savoury and moreish. Not to mention, extremely filling as per the name implies, it is a plentiful dish served in large portions, fit for a family!
