龙虾沙拉 (Lobster Salad)
Dinner @ "郑厨私房菜", a home-style restaurant, opened by the Chairman of the Chaozhou Culinary Institute, himself the son of one of Chaozhou's 4 famed chefs of the past. Tucked away at a hard-to-locate corner of the city, I absolutely love the humour of the sign outside the restaurant stating "酒香不怕巷子深" (If the food and wine are good; one is not afraid to venture down deep alleys for them)
Seafood is big in Chaozhou, due to its proximity to the sea. And what can be more opulent that lobster itself? The restaurant in fact, is famous for its crab and lobster dishes, and so to not try a lobster dish would be an unbearable decision.
Unfortunately, as fresh as the lobster was, it was a tad overdone. The slivers of lobster was a smidgen on the chewy side - I prefer them slightly more tender as the lobster would be sweeter. The slivers of lobster was served resting on a little hill of mixed fruit salad - apples, pineapples and Chinese pears but somehow, I found this salad, "dry", as the fruit pieces were not exploding with juices.
As lobster salad goes, I have had better elsewhere and for the most expensive dish of the night, I felt kinda letdown.
