Quiche Du Jour (Seasonal Quiche)

Lunch @ "Nova", a French restaurant.

 

I am never a fan of quiche - they always taste like overbaked eggs, and some can be hard and rubbery.

 

The version here was a big light and subtle pleasant surprise! Is it even Quiche? The texture was almost eggy tofu like with a lovely grilled-baked aroma and a light crispy crust.

 

I was super wow-ed!
