Poplar mushrooms are very popular in Shanghai and I love them as well. They are soft but al dente at the same time. They absorb sauces and gravy well and lends itself to different style of cooking effortlessly - be it soups, stir-frying or even deep-frying.
Here, the mushrooms are stir-fried with "Chinese Black Pig" (known as Kurobuta in Japanese) in a moreish savoury sauce. All umami and irresistible - I kept going back without realising it. A simple dish - but well crafted in taste.
