Mexican Omelet

Lunch @ 'Maya', a Mexican restaurant.

 

"With Roasted peppers, potatoes, caramelized onions topped with guacamole".

 

Mate's choice of main - I liked the Guacamole but found the omelette a tad on the ordinary side - good, fluffy and creamy but not shouting out-of-the-box outstanding.
