Pumpkin Ravioli

Dinner @ "Pistacchio" in Shanghai.

 

I was expecting this to be sweet, but surprisingly, they were very balanced and decadently moreish. The sauce was richly infused with the smokiness of the caramelised glazed speck and it was this smokiness savouriness that turned the tide against a possible sweet imbalance.

 

The fresh, spicy and slightly bitter fresh Arugula provided a third dimension to the overall taste.
