Iberico Pork, Grilled Cabbage, Mustard Seeds & Yoghurt

Lunch @ "The Social Commune", a modern Spanish Tapas joint, under the Jason Atherton Group of restaurants.

 

I could have licked the plate clean.

 

The pork slices were moist and bursting with juices. Perfectly done pork.

 

I love the cooked mustard seeds - they were almost caviar-like, bursting with mustardy abundance as you crushed each seeds in the mouth. They married with the pork really well, suppressing any animalic notes, that pork sometimes may have.

 

Ingenious.
