蚵仔煎 (Oyster Omelette Pancake)

I have not featured this before, most surprisingly but my usual travelling mate does not like seafood, which very much curtailed my chances of eating them.
This time, I have a travelling mate who loves seafood. Finally, the quintessential night market 'meal' in Taiwan is being featured: fresh oysters pan-fried with eggs and glutinous rice paste, to deliver a crispy-eggy on the outside, gooey-moist on the inside with little pieces of tender seafood heaven. Usually served with a savoury gravy.
I love these. They are also found commonly in Singapore, except in Taiwan, there are served slathered in the gravy, while in Singapore, a spicy sauce is served separately for 'dunking'.
