Maras Dondurma/Turkish Ice Cream (土耳其冰淇淋)

Lunch @ "Blackpepper", a newly opened Turkish restaurant in Shanghai.

 

Turkish ice cream, generally made with goat's milk, is famous for that gummy elastic texture, created through the addition of mastic, a resin and salep, a flour made from the root of the Early Purple Orchid.

 

Chewable ice cream, so to speak!
