脆皮豆腐锅 (Crispy Tofu Pot)
Dinner @ "佰家仟味" -Food from Anhui Province (安徽省), usually termed "皖菜".
Here, slightly springy slices of hardened tofu were first cooked stir-fried with thin slices of pork belly, pickled chillies, fresh chillies and spices and then transferred into a pot for a second round of cooking.
The tofu slices absorbed the taste of the soy based sauce amply and the little bursts of heat coming from the pickled chilli and fresh chilli lent heat and intrigue. I love the slightly springy-ness of the tofu slices, almost like eating well done gluten.
