西红柿辣子炒茄子 (Stir-Fried Tomato, Potato & Brinjal)

China now produces 50% of the world's supply of tomatoes and most of them are grown in Xinjiang province. It is no wonder that tomato is heavily featured in Xinjiang dishes.

 

Potato and brinjals are also heavily used in Xinjiang dishes.

 

The dish was delicious, savoury and rich with the aroma of a well heated wok. The only complaint would be that it was a tad too oily.
