I am not sure if the locals really use Sichuan peppers but this being China and Sichuan pepper been widely used, I would not be surprised.
This was an appetiser and one I always enjoyed. Chicken boiled, torn and the pieces infused with Sichuan pepper oil, and served as a cold salad of sort.
The numbing sensation of the Sichuan pepper oil enhanced all the fatty, aldehydic and meaty flavours of the chicken. Quite the best thing to whet up an appetite!
