鸭杂汤 (Duck Offal Soup)

The version from "鴨肉珍".

 

We ordered the soup to go with the rice.

My mate frowned - it was full of offal - liver, lungs, intestines, heart etc, items he does not eat.

But we do agreed - the generous addition of ginger lessens the offal notes of the soup and made it a lot more lighter and refreshing.

 

I do eat offal, and my favourite is the heart, but to finish a bowl on my own was a little too much and much of the soup was left wasted. Pity.
