炒鳝鱼面 (Wok Stir-Fried Eel Noodles)
The version from "阿輝炒鱔魚", a stall highly recommended by the owner of our Guesthouse.
We promised ourselves this is the last dish of the day.
However, the smell of the "Wok Hei" (Wok Aroma), made our mouth watered, and not before long, a steaming piping hot plate of wok stir-fried eel noodle was before us.
I was terribly disappointed that the noodles used was the Ee Mee, a pre-fried type of noodle. I do not like the nutty taste of the noodle but I send kudos to the chef as the thick slivers of eel were cooked perfectly - firm but not rubbery, moist but not crumbly and most importantly, fresh and not fishy! The generous amount of white onion did great to add sweetness to the dish and in overall, it was a great recommendation......provided one likes Ee Mee in the first place! (Yuck!)
