鸭腿当归面线 (Duck Leg Mee Sua In Angelica Broth)
The version from "古都當歸鴨".
Angelica is a type of Chinese medicine with an earthy taste that kinda resemble ginseng but it's sweeter and more floral. Usually taken as a tonic.
Duck stewed well in a soysauce based broth flavoured with Angelica as the Angelica helps to mask the somewhat more animalic taste of the duck.
Mee Sua is a very fine strand variety of salted wheat flour noodles, almost Angel Hair like but once cooked, it becomes very soft, almost melting into the soup or broth when overcooked.
These ingredients made an universally accepted combo. Normally, I would not go for dishes with a heavy hand in Chinese medicine taste (it makes feel like I am sick) but here the medicinal taste has been tamed quite successfully and the entire dish came across umami, meaty and moreish.
It was no wonder folks are driving up to the stall on their motorbikes and shouting out their orders of supper.
