冬瓜糖 (Candied Wintermelon)

Candied wintermelon is a very common Chinese ingredient - it can be consumed as a sweet snack on its own, but as it can be too sweet, it is generally used as an ingredient in Chinese style pastries or brewed into Chinese style liquid desserts.

 

In almost every other time, the wintermelon is candied with refined white sugar. In this case, the shop uses brown sugar instead, and therefore the candied wintermelon is even more caramelised in taste.
