红麴贡丸盅 (Red Yeast Pork Balls Soup)

Dinner at the food court in Taoyuan International Airport.

 

Red Yeast is actually the mould that grows on fermented rice wine lees. The mould develops a lovely sweet, alcoholic, fermented note, that when the end product, a paste, is added to food items, it instantly imparts a rich, fruity and savoury flavour.

 

Here, the pork balls are flavoured by the red yeast, and then boiled into a soup with pork ribs and potatoes. The soup was quite nice and sumptuous but the potatoes were quite bland.
