凤凰酥 (Phoenix Biscuits / Pineapple Tarts With Salted Duck Egg Yolks)

A new version of the ever popular Taiwanese pineapple tart - making use of the "凤" from the Chinese name of pineapples with the same sounding name of "黄" from egg yolk, to pair up into the Chinese name "凤凰" for the auspicious bird of Phoenix.

 

It is just normal pineapple tart stuffed with a piece of salted duck egg yolk. It is still very sweet but the presence of the salty and rich egg yolk actually smoothed out some of the cloying sweetness, although it still does not grow on me.
