Japchae (Korean Mung Bean Noodles Salad)
Part of the Icheon Rice Meal.
I like mung bean noodles....since a lot of countries in Asia also consume this noodle. Here, in Korea, it is usually marinated with soysauce and sesame oil and served as a Banchan.
I like the firm texture of these noodles - it is more tensile compared to rice or wheat noodles. It absorbs flavourings really well and one can have much fun pairing it with all sorts of sauces and gravies.
