Baechu Kimchi (Napa Cabbage Kimchi)
Almost the quintessential signature Korean food known around the globe - these tangy pieces of fermented cabbages are spicy, umami, packed with flavours and almost irresistible.
They are very versatile - in Korea, they are consumed as starters (Banchan), cooked into soups and broths, added to stews and stir-fries and can be ingredients for pancakes and fried rice.
In the restaurant my "entourage" had popped in for lunch, there were 2 large earthern jugs on each table - one containing cubed radish kimchi and the other, but of course, the commonly found fermented Napa cabbage kimchi.
