Sundaeguk (Korean Blood Sausage Soup)

Finally, the main dish - Sundaeguk - Soup with Korean Blood Sausages (Sundae). Everyone was slurping a hot piping bowl at the restaurant. The soup also contained fatty pieces of intestine (gopchang), liver, lungs, bits of cartilage, and pork meat.

 

The soup is amazingly creamy, tallowy and refreshingly umami. There is no hint of animalic tastes or unpleasantness. The pieces of Sundaes were pregnant with juices and exploded with delightful umaminess with each bite in the mouth.

 

Now, I understand why the restaurant was packed to the rafters.
