Kkakdugi (Cubed Radish Kimchi)

A kimchi, popularly served as a Banchan is made with radish cut into small cubes and flavored with salt, red chili powder, spring onions and ginger. It is usually served cold and is usually consumed when the radish is crisp.

 

Biting into the cubes is quite refreshing....almost like biting into unripened pears, except it has an umami body and a spicy savoury finish.
