Tabbouli and Chickpea Salad

½ cup cracked wheat

1 15-oz can chickpeas, rinsed and drained

1 cubed cucumber

Cut up cherry tomatoes, cut in two

2 green onions, chopped

1 cup parsley

1 clove garlic, minced

4 Tbsp olive oil

4 Tbsp fresh lemon juice

Salt and pepper

 

In a medium saucepan, bring 1 ¼ cup water to a boil. Add cracked wheat and turn off the heat.

Add vegetables, oil, lemon juice, salt and pepper.
