Hand picked fruit fermented in small open fermenters. After cold soaking the fruit was fermented at higher temperatures. Gentle tannin extraction was added by handplunging and post ferment skin contact. The wine is soft and plummy with some savoury, earthy overtones understated oak and well Balanced tannin.
