Smoke grilled steelhead

This method for light smoke grilling is great for fish, etc. The Steven Raichlen cast iron smoking plancha is comprised of a box and a grate. I fill the box with wood chips, heat the gas grill to about 500F and the chips will start smoking. Turn the grill heat down and place the seasoned fish on the grate. The fish is in close contact with the smoke, 6 minutes on the flesh side, 4 minutes on the skin side. You get this wonderful non-burned patina, light smoke flavor, juicy fish.
